Our mobile Mugnaini ovens are designed for flexibility. We generally require a level space of approximately 10×15 feet for a full setup. We can position in most driveways, backyards, and parking areas as long as there is clear access for our trailer.
We take inquiries on a case-by-case basis and encourage a minimum of two weeks' lead time to confirm date availability and oven scheduling. For larger events or peak season dates, earlier is always better.
Our capacity scales with your guest count. We staff at a ratio of 1 pizza chef per 25 guests. For events of 100 or more guests, we deploy 3 chefs and can serve 100 personal pizzas within a single hour. Our largest Mugnaini oven fires 8–10 pizzas simultaneously at 700–800°F.
Everything starts with our handmade dough — crafted from authentic Italian double zero flour with a light sourdough yeast for our signature thin and crisp crust. We fire exclusively with hard almond wood, chosen for its long burn time, clean heat, and neutral, slightly nutty flavor. Our sauce is made with traditional San Marzano tomatoes, and all produce is freshly sourced from local Bay Area family farms and vendors.
We operate Italian-made Mugnaini ovens — the gold standard of mobile hearths. Our fleet includes a Model 120 (48" cooking surface) and two Model 140s (54" interior diameter). Each pizza bakes in just 90 seconds at 700–800°F over a hard almond wood fire.
Yes. We offer a wide range of vegetarian pizzas and can work with your guests' needs during the planning process. Please note any dietary requirements when submitting your event inquiry and we will do our best to accommodate.
Our service includes full on-site setup and breakdown of the Mugnaini hearth, all hard almond wood staging and fire management, trained pizza chefs, handmade dough, and all ingredients. We handle everything from first flame to last pizza so you can focus on your guests.
We cater a wide range of events across the Bay Area including corporate events, team lunches, company parties, birthdays, Bar and Bat Mitzvahs, graduations, weddings, and private backyard gatherings. We are scalable for 30 to 300+ guests.
